Traditional takeaway Caribbean food is actually a fusion of influences from many different countries such as England, France, America, Holland and Africa. This fusion has come together to make something truly unique and absolutely delicious, however like many traditional ethnic foods what you tend to get in the UK is nothing compared with what you are likely to find in the Caribbean.

Wander down any high street in London and you will find plenty of dodgy outlets selling what they claim to be jerk chicken. Some are great but on the whole, like with any other popular takeaway style, there is a huge difference between freshly prepared marinades and stuff straight from a bottle.

All of our chefs cooking Caribbean food make all of their marinades and rubs from scratch and with high quality spices and you can really tell the difference. Many also cook their jerk in a proper jerk oven, which is how you get the beautiful crispy skin and Smokey flavor.
